In Vietnam, our own Dan sat down with Danh Dac Vo, a celebrated writer who became a bird's nest farmer. Together they explored one of the most prized and delicate delicacies in the world, along with the patient, eco-conscious craft behind harvesting it.

Edible bird's nest is built by swiftlets, and harvesting it responsibly means protecting both the birds and the habitat they depend on. Danh walked us through methods designed to work with the swiftlets' natural cycles rather than against them.

For Danh, this is as much a cultural practice as a livelihood. He spoke about the challenges of the work, the care each step requires, and the passion that keeps him returning to it season after season.

We filmed this story because it reflects something we care about at Leprendo; even the rarest foods come from real people making thoughtful choices. Danh's approach shows that a specialty delicacy and a deep respect for nature can grow from the same roots.
