Macala Olive Oil - 2025 Harvest - Italian Blend
Details
Our family has been growing olives in Sage, California since 2007, inspired by our Italian roots. This Italian Blend from our 2025 harvest is the closest we've come to bottling those roots: five classic Italian varietals, picked by hand and cold pressed for the freshest, most vibrant oil we know how to make.
🫒 The olives
The blend brings together Pendolino, Frantoio, Taggiasca, Moraiolo and Castelvetrano. These varietals trace back mostly to Umbria, with others from Liguria and Sicily. Each one brings its own character, and together they make a balanced, layered oil.
🌿 How it's made
Every olive is hand picked and cold pressed to protect its flavor, aroma and natural goodness. Our 2025 oil is Certified Extra Virgin by the California Olive Oil Council.
💚 Very high polyphenols
Lab tested at 601 mg/kg of polyphenols, a very high count for olive oil. Polyphenols are natural antioxidants that come from the olive itself, and they're behind the peppery tickle you feel at the back of your throat with truly fresh oil.
🏛️ A long history of wellness
Olive oil has been part of daily life around the Mediterranean for thousands of years. The ancient Greeks and Romans used it as food, as medicine and as care for skin and hair. Greek physicians, Hippocrates among them, recommended it in many of their remedies, and athletes rubbed it into their muscles before competing.
That tradition lives on today. Extra virgin olive oil is the heart of the Mediterranean diet, one of the most studied ways of eating in the world. Many families still take a spoonful of fresh oil each morning, a habit passed down for generations.
😋 Taste
Fresh, green and lively, with a peppery finish.
🍽️ How to enjoy
- On its own: Pour a little into a spoon or small dish and taste it straight, the way olive oil makers do.
- With bread: Serve with warm crusty bread, a pinch of flaky salt and cracked pepper.
- As a finishing oil: Drizzle over pasta, soups, grilled fish, roasted vegetables or beans just before serving.
- In salads: Whisk with lemon juice or a good vinegar for a simple, bright dressing.
- With cheese: Pour over fresh burrata, mozzarella or ricotta, or alongside aged cheeses.
- For something sweet: Try it over vanilla ice cream with a sprinkle of sea salt.
To get the most from the polyphenols and fresh flavor, enjoy it raw or added at the end of cooking.

Macala Orchards
Macala Orchards is a family-owned orchard in Sage, California, growing olives, pomegranates, figs, guavas, and zinfandel grapes on a 20-acre property called Villa Macala. Inspired by the family's Italian roots, they hand-harvest their olives and press them within hours to make award-winning extra virgin olive oil certified by the California Olive Oil Council. Their pomegranates become cold-pressed juice and jelly, and their guavas and figs become seasonal jams. Everything they sell is made from fruit grown on their own trees.
